Japanese Meets Italian At Trattoria Pizzeria LOGIC | CoolJapan

Trattoria Pizzeria LOGIC and its interior

Japanese-style Italian restaurants have been trending in the Singapore dining scene. Trattoria Pizzeria LOGIC makes its debut hot on the heels of recent openings by Pronto and Goo Italiano, who play in the same Italian-fusion chain genre. Brought in by Oizumi Foods — established in Japan in 1982 with over 40 food brands and 324 restaurants — Trattoria Pizzeria LOGIC has 18 restaurants in its home country, one in Ho Chi Minh City, and now in Singapore.

Trattoria Pizzeria LOGIC's roots

We had a brief chat with Kenji Oizumi, President of Oizumi Foods and learned that Trattoria Pizzeria LOGIC came about after the company bought over a café named LOGIC in Osaka 15 years ago and converted it into an Italian restaurant. A youthful and energetic entrepreneur, Oizumi said the reason he ventured into Italian food, especially pizza, is because it is well-loved by people from all walks of life. On his company’s international expansion, he added that the economic slowdown in Japan is urging businesses like his to look overseas for growth.

Pizza and pasta

Trattoria Pizzeria LOGIC’s signature is its Neapolitan pizza that uses flour imported from Caputo in Naples, designed by Pizzaiolo Junichi Shoji, who is the winner of the prestigious Napoli Pizza World Championship 2012, an annual global contest to determine the world’s best pizza makers.

For added flavour, the dough is made with fresh yeast. The pizza is then baked in a custom-built kiln at 496°C; the intense heat creating a crisp-crust pizza with a softer mouthfeel that is enhanced by the smoky flavour and aroma imparted by the Australian Almond and Jarrah tree woods used to fire the kiln.

Paying tribute to the Lion City is a specially created Pizza Leone (means lion in Italian) that is crowned with a combination of ham, jalapenos, pineapples and ricotta cheese.

More of Trattoria Pizzeria LOGIC's Italian cuisine

Besides pizzas, the trattoria offers a taste of Southern Italian cuisine with a menu populated by specialities from the Sorrento Peninsula and the Amalfi Coast, such as DOP-certified Mozzarella Cheese “Caprese” served with cherry tomatoes, and Spaghetti Carbonara “Angelo” made with fresh cream, egg, Parmigiano Reggiani and Pecorino.

Another popular item is the Paccheri, a large tube pasta originating from the Campania region that comes with Neapolitan meat sauce laden with tender braised spareribs and meatballs, and topped with grated Parmigiano-Reggiano.

On the tipples front, you’ll find a decent variety of wines curated to match the Italian dishes. For the time-pressed office crowd in the Tanjong Pagar area, the restaurant — nestled along a row of shophouses on Craig Road — also serves lunch sets, consisting of a salad, a choice of pasta or pizza, and coffee or tea at SGD18++.
